TL:DR
A giant alien ship landed on Earth, and teaches us how to make our planes turn into robots. Then more aliens come and PWN Earth, but then surrender because we have CULTURE!!! Then humanity starts fucking like crazy, also cloning, and send out colony ships everywhere, which run into more aliens, who we beat with LISTEN TO MY SONG!!!
An Idiot's Guide To The Franchise
Super Dimensional Fortress Macross
Where it all began. The original series about transforming planes, bitchy pop idols and music versus aliens. Man goes into space, Earth gets nuked, man comes back and gets even. Also music.
Token Musician: Lynn Minmay.
Do You Remember Love
The spinoff movie, basically the same story but abridged and fucked about with. Supposedly a movie from the future of the setting, dramatising the events of the first series.
Macross II
Alternative Universe OVA, where mankind didn't leave the solar system and get invaded again, by the Marduk, who are the master of the Zentraedi in this version and have their own music. Made by a different production company under lisence, and thus disavowed by the studio.
Macross 7
AKA the one with the guitar powered mech. As I understand, space elf vampires attack and are defeated by hair metal. Has the greatest soundtrack from any anime. Various OVAs and movies exist, containing a space whale.

Macross Plus
Top Gun meets Wargames in the Macross universe. It doesn't have much action but it does have cool characters, including a homicidal AI pop star. A very good OVA.

Macross Zero
A prequel OVA about the first transforming planes and stuff. Mostly set on a small desert island. Interestingly, the prototype planes in it are more powerful than the next-gen ones of series set later. Kinda like Enterprise, which, depending on your opinions, may be a good analogy for the series as a whole.

Macross Frontier
The latest series. Considered by most to have poor pacing, too much wacky comedy and a muddled final quarter. However, it also has a ton of homages to earlier series and a final episode which is one long fight. Most notable for They Holstered The Flight Deck.

Robotech
The original Macross series was chopped up to form the first season of Robotech, a popular 80s series and one of the first gateway anime. While the overall plots are similar, they are seperate series and should be treated as such on this wiki.
